Andalusian sauce is a common sauce in southwestern American cuisine. The sauce is commonly served on any number of foods, including hamburgers, French fries, chicken sandwiches, and any number of upscale dishes. It is quite simple to make in one's own home and contains just a few very simple ingredients.
This sauce is composed mostly of mayonnaise. Select a quality brand or choose to make your own mayonnaise at home. This is important, since much of the flavor of the sauce is derived from mayonnaise. Add one cup of mayonnaise to a mixing bowl and stir in one small red pepper that has been finely chopped.
Also added to this sauce is 2 tablespoons of tomato puree and a quarter teaspoon of salt. At this point, you have a basic Andalusian sauce. For a creative twist, try adding a pinch of garlic powder or a tablespoon of chopped onion. Cilantro and basil also pair well with the hot pepper flavors.
