A study done by the Pacific Health Research Institute followed over 3000 Japanese men between 1965 and 1999, which showed a positive correlation between cerebral atrophy and consumption of tofu.
High consumption of tofu has been linked with dementia in older age groups in more than one study, whereas in younger and middle-age age groups it might actually protect the brain. It has been stressed that there is no evidence that eating tofu in moderation can cause any problems, and that further research is needed to confirm both the negative as well as the positive effects.

Ide o (ne)sirenie dezinformacii, na internetoch je ich uz tak az dost.

Tofu je len vyzrazane sojove mlieko(staci dat do cerstveho sojoveho mlieka trochu citronovej stavy, hned sa ti oddeli "tvaroh" od "syrovatky") - a sojove mlieko je zas len povarena pomleta soja, v lepsom pripade este predtym par hodin namocena.

Co robi strukoviny "stravitelnejsimi" je rozklad zlozitejsich bielkovin(ktore vie ludske telo stravit len tazko alebo vobec) na jednoduchsie. Varenie tam vie urobit kus prace - zdravy organizmus uz takto spracovanu soju "zvladne" - ale az fermentacia z nej spravi fakt bezproblemove jedlo ... staci sa spytat hocijakeho alergika na soju/strukoviny(ktorym prave chybaju tie spravne enzymy na stravenie urcitych zlozitych bielkovin), drviva vacsina ti hodi tofu do rovnakeho vreca so sojovym texturatom, varenou fazulou atd. - pretoze to fakt nic ine ako uvarena soja nie je - zatial co problemy s produktmi z kvalitne sfermentovanej soje(sojova omacka napr.) ma len maloktory...
