Open Keychain Access (Applications/Utilities)

Select Passwords on the left.

Delete the keychains for the sites you don't want Safari to "remember".

However, if you have User names and passwords selected in Safari / Preferences - Autofill, you will be prompted to save that password to another keychain. Click No when asked to save the password.
