Please let me introduce how to make a green tea first. There are two main process for producing "Sencha"(a green tea most commonly drunk in Japan), "Aracha" production process and finishing process. "Aracha" production process is: 1. Steamed for 1-2minutes. 2. Agitated, rubbed and hot-air drying for about 45minutes, keeping the temperature of tealeaves about 35 degree C. 3. Rubbed applying pressure in order to uniform moisture content for about 20minutes. 4. Agitated and rubbed with rotating, and hot-air drying for about 40minutes. Tea leaves are getting ravelling. 5. The process to make tealeaves needle like shape. Heat the kiln under the machine adding poundage. This process is very important and requires proficient skill. 6. Drying process. Hot-air drying with the temperature about 80degree C until moisture content of tealeaves becomes about 5%. Finishing process is: 1. Sifting, cutting and trimming. 2. Heating - forms volatile sulfur amino acid, pyrazine and furan compound., etc. by pyrognostics of amino acid and sugar, which generate the aroma. 3. Selecting and blending. Tealeaves plucked are processed into Aracha on the same day, and packed by nitrogen decompression per 30kg, and stored in minus 10 degree C., which enable to keep the quality of tealeaves in nearly perfect condition. Then about once a 2 weeks, the Aracha are finished and stored again in zero degree C. Most of these finished teas are sold out in 2 weeks. So we can say that you can get fresh-finished green tea within a week at the earliest, within about a month at the latest, while most supermarkets sell old and low-quality green tea which has been stored improperly.
