Black Bean Chilli Chocolate (mole poblano de coraotas negras)



Once reserved as a dish fit only for the king, this is an ancient Mexican recipe using mild chillis and dark chocolate - Go on! Give it a go ... You know you want to!



Ingredients - This is what you'll need:

250g dark beans (e.g. black turtle beans or pinto beans),
100g onion,
2 large tomatoes,
10g mulato chillis,
10g ancho chillis,
10g pasilla chillis,
20g almonds,
15g raisens,
2 cloves chopped garlic,
20g of good dark chocolate,
1/2 teaspoon ground coriander,
1 clove, and
1/4 teaspoon anise and cinnamon



Directions:

1. Soak the beans overnight and then cook until tender
2. Quickly sear both sides of the chillis (don't burn!) then soak till rehydrated
3. Blend the rehydrated chillis with the tomatoes
4. Fry onions till soft then add almonds, raisens, garlic and the tomato / chilli mixture
5. When heated thoroughly, add the chocolate and stir till it has melted
6. Add beans

Serve with tortilla and sour cream, or as an ideal topping for baked potatoes.
